Disciples Escoffier
In March I was knighted with wooden spoons to become a Disciples Escoffier, and received a green sash with a beautiful copper pan attached to a certificate. This was a great honor to be recognized for my work as a chocolatier, and teacher. The UK of Disciples Escoffier is part of a worldwide organization that works in promoting the beliefs and objects Auguste Escoffier laid out.
Who was Auguste Escoffier?
He was a French chef who is known as the God Father of modern cuisine as his recipes, techniques, and style of chef hierarchical brigade de cuisine system are still followed today. As a young chef at college was taught many of his recipes and worked my way up to chef de partie for pastry (running a pastry section)
As a Disciples Escoffier, I believe in the ethos of Augustus Escoffier

After the ceremony, we all enjoyed a 6-course meal with wines led by other disciples and had a chance to chat with Auguste's grandson. Notable current disciples include Micheal Roux, cherish Finden (pastry chef judge on bake off the Professionals), and Monica Galetti (judge on BBC Master Chef the Professionals) became a disciple this year too.

Decorate a box with your beach design, then add your chocolate treats to take home
